I really wanted to make this and I did not have time for the crockpot. So I made it on the stove. I also made half the recipe. I used Italian seasoning in place of the basil and parsley (it’s what I had) and I used about a quarter cup each of freshly shredded Gouda and freshly shredded cheddar in addition to the velveeta which I cut back a tad. Wow! This is definitely one of the best soups I’ve ever made and tastes like it came from a restaurant. Five stars you’ve got to make it on the stove or the crock just make it!

Tweaked it for the instant pot and it turned out amazing! Will def make again!
