Hi Lisa, it sounds like the the dairy got too hot and separated, just be aware of how hot the skillet is next time and you’ll be good!

Loved this recipe. First time I made it the sauce was perfect. Tonight when I made it the ricotta cheese curdled and the sauce separated. Only difference was that I only had grated Romano so used that instead of the shredded Parmesan. Could that have been the problem? Really want to try this again!

Very delicious. Lighter than you’d expect. I used chicken thighs (hate breast). Could definitely add more chicken than it calls for.

I definitely agree with the suggestion to cut down on the pasta, maybe by 1/2 for 4. I added garlic, red pepper flakes and mushrooms. It was very tasty. I might also try broccoli instead of spinach next time. Overall, I enjoyed it.
