Thank you, for this is a nice staple to fall back on when it’s not etched into the brain, but I am a flavor guy and simplicity as well guy, so I will be adding all fresh from the farms in Michigan, garlic, a smashed clove each jar, celery a must and onions, grn pepper, and or variety of other mild fresh peppers, and I do tend to dab a splash of worscheshire,each as I use mine mainly for goulash, soup with sausage and cabbage, chili, spaghetti sauce, enjoy😁

Hi Becky! I checked out this source, which indicated the following: “add 2 tablespoons of bottled lemon juice or ½ teaspoon of citric acid per quart of tomatoes.”

Don’t use fresh lemon juice it doesn’t have a consistent acidity. Use bottled or do what I so and use citric acid especially for canning tomatoes. It’s in the section where all the canning supplies are.

Hi Margaret, the recipe notes that there are 26 grams of carbs per serving, which actually isn’t very much as that is for an entire quart of tomatoes. Tomatoes have about 3.9 grams of carbs each.

I caned some tomatoes yesterday but did not add lemon juice! But today after reading all comments I’m wondering if that was a mistake on my part? Should  I redo the process and add in the lemon juice? Loved the basil I did include that along with garlic clove!
