Hi there! I was wondering, if i doubled this recipe would it all still fit in 1 9×13 pan or would I need another pan? I want to serve 10-12 guests. Thanks!!

In reply to Steph. Hi Steph! You can add about 3/4 cup halved cherry tomatoes, they would get added in step 7. If you add spinach, you are correct, you'd want to sauté them with the onions and peppers, I would use a good 2 cups, it'll shrink down significantly. Enjoy!! Over time, I bet you'll like cooking more and more! :)

Hi Stephanie..I don’t enjoy cooking but I like to eat so I’m always in search of recipes that are fairly easy to feed my mom and husband..I have a few questions..If I add the cherry tomatoes and baby spinach to this recipe, how much of each would I use? Also, would I saute the spinach in with the onions and peppers?

Haven’t tried this yet, but planning to do it this weekend. We will have to leave out the feta cheese because my husband doesn’t think he likes it. Sigh.
I just want to say that I am sure this will be a hit. We can find a lot of good recipes all over the Internet. But sometimes something looks good and it turns out to be a swing and a miss.
And I just want you to know that every single recipe I have tried from your website has been a hit. I have tried recipes that I never thought about, but because every other recipe from your site has been a winner, I had no worries about coming up with a dud!
This is definitely my go-to site when I want something delicious for our menu.
